I suspect if I wasn’t married, I would be like Peggy, 40-years-old, single and relating better to four-legged friends. I also love the name of her dog, Pencil.

Thankfully, I’m married and I have a dog! Yeah! This morning, Daisy killed a spider. Kinda weird to watch her do that, but it’s also quite helpful.
Another round of hot Kansas weather had me craving ceviche. It’s so easy to make and it tastes refreshing, as a meal or a snack. As long as you have the patience to wait for it “cook” in the fridge, I think it’s worth the wait.
Here are the fixings for ceviche - lemon and lime juice, 1/2 onion (chopped up), canned tomatoes and fresh fish. Mark found 2 pounds of fresh Tilapia at Dillons. Wowa! It didn’t have the fishy smell of old fish and it looked beautifully translucent.
Damn, I look domesticated. Mark went grocery shopping for the ceviche. After work, I prepped the fish for its overnight stay in the fridge. This time around, I stuck to the formula from Simply Recipes.
I served this ceviche up with guacamole and salsa paella.
I think it’s so cool to watch the translucent fish meat turn opaque in the mix of citrus juices, onions and tomatoes. I was once worried about serving up cold fish and I didn’t want to kill Mark with food poisoning. However, the fish keeps on cooking in the fridge, thanks to those yummy citrus acids.
Like cooking, relationships need time and patience. I’m celebrating an anniversary weekend with my hubby. On this day, we started dating seven years ago. It all started with a thrift store scavenger hunt in San Francisco and a sense of adventure. We tied for first place after judge deliberations at the Hush Hush. And later in the evening, we started holding hands at Fisherman’s Wharf. It’s amazing where we’ve been and the things we’ve experienced together. We mastered the art of taking self-portraits during our Euro Trip. We snapped this picture at St. Peter’s Square in Vatican City. Our relationship needed time and patience. Apparently I can be a little crazy, moody, melodramatic and downright dysfunctional. I’m grateful Mark’s managed to stick by my side despite my roller coaster life. I also believe we’ve helped each other grown into better human beings. Now, I can’t imagine my life without Mark.
After the 10:00 News, I like to unwind from work day with the Daily Show and the Colbert Report. All the snarky comments and crass observations I keep pent up in my brain during my work shift often ends up being exploited in a comedic skit or two on these shows. It’s a relief to laugh about the absurd moments in current events, politics and at times, human tragedies.
This week, I am tickled by reports filed by Daily Show Correspondent (and US Marine) Rob Riggle from Iraq. No green screen for this Marine — he’s interviewed American service men and women in the Green Zone and beyond.
“People think that ‘oh, it’s a war zone, and these soldiers, we can’t talk to them and we can’t allow them to laugh,” said Rob Riggle. “You don’t think they could use a laugh?”
For some reason, this Journey song has been haunting me since the Soprano’s finale and Sen. Clinton’s bright idea to use it on her campaign web site. It’s so bad, it’s good…and damn catchy.
Last weekend, this song ended up on the jukebox at Buffalo Wild Wings. And some people couldn’t help themselves. They joined in and the song kept us waiting on the chorus: “Don’t Stop Believing!”
Yes, this tune will be stuck in my head and your’s - for the rest of the day.

Right now, cicadas are singing outside. My co-worker’s kids love this big, flying bugs because they’re “crunchy.”
I am such a wuss when it comes to bugs.
It was hot and steamy in Topeka. We also got a few rounds of pounding rain. Last week, I snapped this picture of clouds outside of the newsroom. Folks heading back from their dinner break told me they saw lightning popping up in the clouds.
A few days ago, I stopped by my favorite spot for Chinese food in Topeka, Sun’s. I ordered chicken fried rice and waited for my take out order by some Chinese magazines and a Transformer’s coloring book. Another lady waiting for her take out order sat next to me. Out of the blue, she told me she thought I had nice Oriental hips.
She said it didn’t matter if an Oriental woman is skinny or fat, she always had nice shaped hips. I blushed and thanked her. I wasn’t sure if she was telling me I was chubby-looking with oriental hips or that I simply had nice hips. She also told me she always thought Oriental women had nice straight hair. Again, I thanked her. I added that when I was younger, I used to want wavy hair like hers. I told her I ended up doing a couple of perms to get that look.
Her order came out first and we said good-bye.
It felt like an odd conversation between strangers. Eventually, I got over the shock of her using the politically incorrect word, “Oriental.” In the end, I saw that she meant well.
It’s kinda like my relationship with Topeka. Even though this town has a slight racial bias and could be a little narrow-minded when it opens up it’s mouth, overall, it means well.
I was invited over to the bride’s house to help get ready for the wedding in Long Island. After drinking mimosas and zipping into the gowns, the photographers dropped by to capture the bridal party looking beautiful.
This morning, I reported for shrine guardian duty at Most Pure of Heart Mary. The church has a Adoration Shrine to the Eucharist opened 24 hours, seven days a week. Basically, the church needs at least one person to keep watch over the Eucharist and the chapel. Beyond that, is up to the volunteer. I prayed a Rosary and read through the Book of Ruth and Joesph’s adventures in Egypt. I relished the space and it felt soothing because it was free of human voices.
Before getting dragged into the pool, here’s Ria hanging with her attendants, Jennie and maid of Honor Nikki. Nikki rocked our world by helping us get a kick-ass discount on car rentals. Yeah for Nikki!
I enjoyed the hearty veggie lasagna - cheesy, tangy and oh so good! I know it’s a bit cut off in this picture, but there was also some yummy pulled pork meat for sandwiches. I ended-up going for seconds on the pork sandwiches the next day — the juicy spices marinated the meat, make it even yummier.
I also loved these crab cakes. The crab meat was baked into these savory mounds. I made sure I got plenty of seafood on this trip to the East Coast. Sometimes I miss eating fresh fish in Kansas.
Matt and Ria has a beautiful wedding. It was like something out of a movie. It was a pleasure to be surrounded by so much joy and best wishes for this gorgeous couple.
The bridal party was up at 5 AM to get beautiful for this special day.
I got to sleep-in! Yeah!
Ria was kind enough to have munchies and mimosas for her girls. Yeah!
Many folks took advantage of the shady spots at the Watermill. I felt like we were the old married farts at the ceremony. We’re coming up on 2 years of wedded bliss in a few weeks.
The bridesmaids looked so pretty in their sage green dresses. I heart David’s Bridal! That store is a blessing when you bridal party comes from all over the country.
Newlyweds walk down the aisle and ready to party! I promised the bride to bring a round of drinks for her girls as they endured the photo session during the cocktail hour.

Watching a Travel Channel show on Los Angeles. I’m a sucker for specials that open up a window to open. L.A. Story, Top Chef Season 2, Shop Girl, Monk (for a window to the Bay Area) and pretty much anything for a glimpse of home.
This weekend, I indulged in the feel of home as my family headed to New York for Matt and Maria’s Wedding. I spent four days eating good food, meeting wonderful people and letting what’s left of my hair down.
It was a pleasure to be surrounded by family and celebrating my beautiful cousin and her Long Island family.
The bridal party woke-up at 5 AM to make themselves beautiful. It seemed like they used every minute before the wedding to take care of details for the bride.
Of course, this wedding was something like covering a Hollywood power couple — flash bulbs sparkling at every turn and everyone had their cameras out. So…I’ll get around to posting more pictures of the wedding and food…later.
